Strawberry Cake


Happy Mother’s Day! I just wanted to do a quick recipe share. Each holiday I have a special cake that I make. On Mother’s Day we eat Strawberry Cake with cream cheese icing and chocolate ganache. Yummm, right?


I first had this cake prob 10 years ago (or more) at a bridal shower. It was one of the yummiest cakes I had ever eaten so I asked for the recipe. Graciously the host gave it to me. Yippee! So now I’m sharing with you.


Strawberry Cake

1 white cake mix

1 6oz package strawberry jello

1 cup mashed strawberries

1 cup veg oil

1/2 cup whole milk

4 large eggs

4 tbs all purpose flour

1/2 cup sugar Mix together and pour into greased and floured

2 (8” or 9”) cake rounds

Bake at 350 for 20-30 mins (oven times vary, so make sure you keep an eye on the cakes around 20 min mark).

Let cool. Then frost cake. Pop into fridge and make chocolate ganache. Once ganache has cooled about 5 mins pour over iced cake.

Icing:

1 pkg cream cheese

1 stick butter

3-4 cups powder sugar

Tsp vanilla

(I double this, because I like lots of icing).

Chocolate ganache

3/4 cup whipping cream heat (do not boil)

Pour over 8oz choc chips

Stir until completely melted and combined. Let cool. Then pour over iced cake.


Garnish with strawberries.
